Ingredients:
For the Beef:
2 lbs beef brisket, cubed
1 large onion, chopped
6 garlic cloves, minced
2 tablespoons ginger, minced
1/4 cup soy sauce
1/4 cup oyster sauce
1/4 cup brown sugar
2 star anise
1 cinnamon stick
4 cups beef broth
2 tablespoons cooking oil
Salt and pepper to taste
Green onions, chopped (for garnish)
Fried garlic (for garnish)
For the Fried Rice:
4 cups cooked rice, preferably day-old
2 eggs, beaten
1/2 cup green peas
1/2 cup carrots, diced
3 tablespoons soy sauce
2 tablespoons cooking oil
Salt and pepper to taste
Directions:
Prepare the Beef:
In a large pot or Dutch oven, heat the cooking oil
over medium heat. Add the chopped onion and
sauté until translucent.
Add the minced garlic and ginger, and cook until fragrant, about 2 minutes.
Add the beef brisket cubes and brown them on
all sides.
Pour in the soy sauce, oyster sauce, and brown
sugar. Stir to combine.
Add the star anise, cinnamon stick, and beef
broth. Bring to a boil, then reduce heat to low
and simmer for 1.5 to 2 hours, or until the beef
is tender and the sauce has thickened. Season
with salt and pepper to taste.
Prepare the Fried Rice:
In a large skillet or wok, heat the cooking oil
over medium-high heat. Add the beaten eggs
and scramble until fully cooked. Remove from
the skillet and set aside.
In the same skillet, add the diced carrots and
cook for 2-3 minutes. Add the green peas and
cooked rice, and stir to combine.
Pour the soy sauce over the rice mixture and
stir-fry for another 3-5 minutes, or until the
ricipe is heated through and evenly coated with
soy sauce.
Add the scrambled eggs back to the skillet, and
mix until well combined. Season with salt and
pepper to taste.
Serve:
Serve the beef pares hot with a side of fried rice.
Garnish with chopped green onions and fried
garlic. Enjoy!
