Apple cake



Ingredients:

For the Cake:

• 1 1/2 cups all-purpose flour

• 1 teaspoon baking powder

• 1/2 teaspoon baking soda

• 1/2 teaspoon salt

• 1/2 teaspoon ground cinnamon

• 1/4 teaspoon ground nutmeg

• 1/2 cup unsalted butter, softened

• 1/2 cup granulated sugar

• 1/2 cup maple syrup

• 2 large eggs

• 1 teaspoon vanilla extract

• 1 cup ricotta cheese

• 1 1/2 cups peeled and diced apples (about 2

 medium apples)

For the Maple Glaze:

• 1 cup powdered sugar

• 3 tablespoons maple syrup

• 1-2 tablespoons milk (as needed)

For Garnish:

• Chopped pecans (optional)

• Extra diced apples (optional)


Directions:

1. Preheat the Oven: Preheat your oven to 350°F

 (175°C). Grease and flour a 9-inch round cake

 pan.

2. Prepare the Dry Ingredients: In a medium

 bowl, whisk together the all-purpose flour,

 baking powder, baking soda, salt, ground

 cinnamon, and ground nutmeg. Set aside.

3. Cream the Butter and Sugars: In a large

 mixing bowl, beat the softened butter,

 granulated sugar, and maple syrup together

 until light and fluffy. Add the eggs one at a time

, beating well after each addition. Mix in the

 vanilla extract.

4. Combine Wet and Dry Ingredients: Gradually

 add the dry ingredients to the butter mixture,

 alternating with the ricotta cheese, beginning

 and ending with the dry ingredients. Fold in the

 diced apples until just combined.

5. Bake the Cake: Pour the batter into the

 prepared cake pan and spread it evenly. Bake in

 the preheated oven for 40-45 minutes, or until a

 toothpick inserted into the center comes out

 clean. Allow the cake to cool in the pan for 10

 minutes, then transfer to a wire rack to cool

 completely.

6. Prepare the Maple Glaze: In a small bowl,

 whisk together the powdered sugar, maple

 syrup, and milk until smooth and pourable.

 Adjust the consistency with additional milk if

 needed.

7. Glaze the Cake: Once the cake is completely

 cooled, drizzle the maple glaze over the top.

 Garnish with chopped pecans and extra diced

 apples if desired.

8. Serve: Slice and serve the cake. Enjoy!
